- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mash the bananas until smooth.
- Add in the oats, protein powder, honey or maple syrup, Greek yogurt, eggs, baking powder, vanilla extract, cinnamon, and salt. Mix until well combined.
- Divide the batter evenly among the muffin cups.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
Notes
- These muffins are best enjoyed fresh but can be stored for a few days.
- Add nuts or chocolate chips for extra flavor.
