Ingredients

  • 2 green tea bags
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey (or natural sweetener of choice)
  • 2 tablespoons lemon juice
  • 2 tablespoons agar-agar powder (or gelatin)
  • 1/2 cup sugar (optional, for added sweetness)

Instructions

  • Steep the Tea:
    • Boil 1 cup of water and steep green tea bags for 5 minutes. Remove the tea bags and let the tea cool slightly.
  • Prepare the Mixture:
    • Combine grated ginger, honey, lemon juice, and the brewed green tea in a saucepan. Simmer over medium heat, stirring occasionally.
  • Add Agar-Agar:
    • Sprinkle agar-agar powder into the mixture while stirring to dissolve evenly. Add optional sugar if desired. Simmer for 3–5 minutes until thickened.
  • Set the Chews:
    • Pour the mixture into silicone molds or a parchment-lined dish. Cool to room temperature and refrigerate for 2 hours or until firm.
  • Cut and Serve:
    • Remove from molds or cut into bite-sized pieces. Store in the refrigerator in an airtight container.

Notes

  • For a vegan option, use agar-agar instead of gelatin.
  • Adjust sweetness by using natural sweeteners like stevia or maple syrup.
