- 2 pounds ripe tomatoes
- 1 large onion
- 4 cloves garlic
- 3 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil
Instructions
- Preheat your oven to 400°F (200°C).
- Halve the tomatoes and place them on a baking sheet with the onion and garlic.
- Drizzle olive oil over the vegetables and season with salt, pepper, and sugar.
- Roast in the oven for 25-30 minutes until caramelized.
- Transfer the roasted vegetables to a pot and add vegetable broth.
- Bring to a simmer and cook for 10 minutes.
- Blend the soup until smooth, then stir in fresh basil.
- Serve hot with a drizzle of olive oil.
Notes
- For extra creaminess, add a splash of cream before serving.
- This soup can be frozen for up to three months.
