- 200g dates, pitted and chopped
- 250ml water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g dark brown sugar
- 2 large eggs
- 200g self-raising flour
- 100ml double cream
- 150g toffee sauce
Instructions
- Preheat your oven to 180°C (350°F).
- In a saucepan, combine chopped dates and water, then bring to a boil. Remove from heat, stir in baking soda, and let it cool.
- In a mixing bowl, cream together the butter and dark brown sugar until light and fluffy. Add the eggs one by one, mixing well after each addition.
- Fold in the cooled date mixture followed by the self-raising flour until just combined.
- Pour the batter into a greased baking dish and bake for 30-35 minutes or until a skewer comes out clean.
- While the pudding is baking, prepare the toffee sauce by heating double cream and toffee sauce together in a saucepan until smooth.
- Once the pudding is baked, pour the hot toffee sauce over it and let it soak.
- Serve warm with additional toffee sauce and cream.
Notes
- Serve with vanilla ice cream for an extra indulgent treat.
- Make sure the dates are finely chopped for better texture.
