Ingredients

  • 200g dates, pitted and chopped
  • 250ml water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g dark brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 100ml double cream
  • 150g toffee sauce

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, combine chopped dates and water, then bring to a boil. Remove from heat, stir in baking soda, and let it cool.
  3. In a mixing bowl, cream together the butter and dark brown sugar until light and fluffy. Add the eggs one by one, mixing well after each addition.
  4. Fold in the cooled date mixture followed by the self-raising flour until just combined.
  5. Pour the batter into a greased baking dish and bake for 30-35 minutes or until a skewer comes out clean.
  6. While the pudding is baking, prepare the toffee sauce by heating double cream and toffee sauce together in a saucepan until smooth.
  7. Once the pudding is baked, pour the hot toffee sauce over it and let it soak.
  8. Serve warm with additional toffee sauce and cream.

Notes

  • Serve with vanilla ice cream for an extra indulgent treat.
  • Make sure the dates are finely chopped for better texture.
