- 2 cups mixed vegetables (e.g. bell peppers, zucchini, carrots)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup Greek yogurt
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 teaspoon cumin
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the vegetables and toss them with olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 25-30 minutes, until tender.
- In a bowl, mix Greek yogurt, tahini, lemon juice, water, and cumin to make the sauce.
- Once the veggies are done, assemble your glow bowl by layering the roasted veggies and drizzling with tahini yogurt sauce.
