- 4 cups grated potatoes
- 1 cup grated onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped
- 1 cup turkey bacon, cooked and crumbled
- 1/4 cup vegetable oil for frying
Instructions
- In a large bowl, combine the grated potatoes and onion.
- Add in the eggs, flour, salt, pepper, garlic powder, and parsley. Mix until well combined.
- Fold in the crumbled turkey bacon.
- In a skillet, heat vegetable oil over medium heat.
- Scoop the potato mixture into the skillet, flatten slightly and cook until golden brown on each side, about 4-5 minutes per side.
- Drain on paper towels before serving.
Notes
- For extra crispiness, let the grated potatoes drain in a colander for 10 minutes before mixing.
