- 2 cucumbers
- 1 tablespoon salt
- 4 slices turkey bacon
- 1/4 cup red onion
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 tablespoons fresh dill
Instructions
- Slice cucumbers thinly and sprinkle with salt. Let sit for 15 minutes.
- While cucumbers are resting, cook turkey bacon until crispy. Crumble and set aside.
- Rinse cucumbers under cold water and drain well.
- In a bowl, combine cucumbers, red onion, sour cream, apple cider vinegar, sugar, black pepper, and dill.
- Fold in the crumbled turkey bacon.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- For a vegetarian option, omit the turkey bacon.
- This salad can be made a day in advance for enhanced flavors.
