  • 1 medium spaghetti squash
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 1 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds.
  3. Drizzle the olive oil on the cut sides and sprinkle with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes.
  5. In a skillet, sauté garlic until fragrant, then add spinach and cook until wilted.
  6. Combine the cooked chicken, sautéed spinach, and half of the parmesan cheese in a bowl.
  7. Once the squash is cooked, use a fork to scrape out the strands and mix with the chicken mixture.
  8. Stuff the mixture back into the squash halves and top with remaining parmesan cheese.
  9. Bake for an additional 10 minutes until cheese is bubbly.
  10. Serve warm and enjoy!

Notes

  • For extra flavor, add Italian seasoning to the chicken mixture.
  • This dish can be made ahead and reheated in the oven.
