Ingredients

- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 1 cup parmesan cheese, grated
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half and remove the seeds.
- Drizzle the olive oil on the cut sides and sprinkle with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes.
- In a skillet, sauté garlic until fragrant, then add spinach and cook until wilted.
- Combine the cooked chicken, sautéed spinach, and half of the parmesan cheese in a bowl.
- Once the squash is cooked, use a fork to scrape out the strands and mix with the chicken mixture.
- Stuff the mixture back into the squash halves and top with remaining parmesan cheese.
- Bake for an additional 10 minutes until cheese is bubbly.
- Serve warm and enjoy!
Notes
- For extra flavor, add Italian seasoning to the chicken mixture.
- This dish can be made ahead and reheated in the oven.
