Garlic Herb Chicken: Juicy Delight with Mashed Potatoes & Carrots

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 1/4 cup brown sugar
  • 2 tablespoons butter
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture on the chicken breasts.
  3. Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
  4. Meanwhile, boil potatoes in salted water until tender, about 15-20 minutes.
  5. Drain potatoes, then add milk and butter. Mash until smooth.
  6. For the glazed carrots, melt butter in a skillet, add sliced carrots, brown sugar, and water. Cook until slightly caramelized, about 8-10 minutes.
  7. Serve the chicken with mashed potatoes and glazed carrots.

Notes

  • For extra flavor, marinate the chicken in the herb mixture for a few hours before cooking.
  • Feel free to add your favorite herbs to the mashed potatoes.
