- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 1/4 cup brown sugar
- 2 tablespoons butter
- 1 tablespoon water
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture on the chicken breasts.
- Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
- Meanwhile, boil potatoes in salted water until tender, about 15-20 minutes.
- Drain potatoes, then add milk and butter. Mash until smooth.
- For the glazed carrots, melt butter in a skillet, add sliced carrots, brown sugar, and water. Cook until slightly caramelized, about 8-10 minutes.
- Serve the chicken with mashed potatoes and glazed carrots.
Notes
- For extra flavor, marinate the chicken in the herb mixture for a few hours before cooking.
- Feel free to add your favorite herbs to the mashed potatoes.
