3 egg whites, 10g pecorino cheese (or Parmesan), ½ tsp chives, 10g butter, ⅛ tsp sea salt, pinch of white pepper, 1 tsp olive oil, ½ cup asparagus, 2 thin slices chicken ham
Instructions
1. Separate egg whites and chop vegetables. 2. Sauté asparagus and ham in olive oil. 3. Whisk egg whites until soft peaks form. 4. Melt butter, pour egg whites into the pan, and stir gently. 5. Add filling, bake for 2 minutes. 6. Fold, press edges to seal, and serve immediately.
Notes
Whisk egg whites just before cooking to maintain fluffiness. Do not overwhip or let them sit too long. Serve immediately as the omelette will deflate over time.
