- 1 pound orzo pasta
- 2 cups cooked chicken, shredded
- 1 cup cherry tomatoes, halved

- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced

- 3 tablespoons olive oil

Instructions
- Cook orzo according to package instructions; drain and set aside.
- In a large bowl, combine chicken, cherry tomatoes, spinach, feta cheese, olives, and red onion.
- Add cooked orzo to the bowl and mix well.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
- Feel free to substitute the chicken with grilled shrimp or chickpeas for a vegetarian option.
