- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook for about 6-7 minutes on each side or until fully cooked.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream, lemon juice, and lemon zest. Allow to simmer for 3-5 minutes until the sauce thickens.
- Return the chicken to the skillet and coat with the sauce. Cook for an additional 2 minutes.
- Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- This dish pairs nicely with rice or pasta to soak up the creamy sauce.
