Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced

  • 2 green onions, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Place the diced chicken in the bottom of the crockpot.
  2. Add the cooked rice and mixed vegetables to the pot.
  3. In a small bowl, mix together the soy sauce, sesame oil, garlic, and ginger.
  4. Pour the sauce over the ingredients in the crockpot.
  5. Stir everything to combine well.
  6. Cover and cook on low for 4-5 hours, or until the chicken is cooked through.
  7. Once done, stir in the green onions before serving.

Notes

  • For a vegetarian version, replace chicken with tofu.
