Ingredients

- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 green onions, sliced
- 2 garlic cloves, minced
- 1 teaspoon ginger, minced
Instructions
- Place the diced chicken in the bottom of the crockpot.
- Add the cooked rice and mixed vegetables to the pot.
- In a small bowl, mix together the soy sauce, sesame oil, garlic, and ginger.
- Pour the sauce over the ingredients in the crockpot.
- Stir everything to combine well.
- Cover and cook on low for 4-5 hours, or until the chicken is cooked through.
- Once done, stir in the green onions before serving.
Notes
- For a vegetarian version, replace chicken with tofu.
- Feel free to add your favorite vegetables.
