- 2 pounds potatoes, peeled and diced
- 1 pound bacon, cooked and crumbled
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions, sliced
Instructions
- In a large crock pot, add diced potatoes, cooked bacon, onion, chicken broth, garlic powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
- Use a potato masher to partially mash the potatoes for a creamy texture.
- Stir in heavy cream and cheese until melted and combined.
- Serve hot, garnished with green onions.
