- 1 pound ground beef
- 12 ounces rotini pasta
- 1 can Rotel diced tomatoes
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 2 cups beef broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
- Stir in garlic powder, onion powder, salt, and pepper.
- Add beef broth and bring to a simmer.
- Stir in rotini pasta and cook according to package instructions until al dente.
- Add Rotel diced tomatoes and cream cheese. Stir until the cream cheese is melted and everything is combined.
- Mix in shredded cheddar cheese until melted. Serve hot.

- For added flavor, consider using spicy Rotel.
