Ingredients

  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, almond flour, cocoa powder, and sugar.
  3. In a separate bowl, whisk the eggs, melted coconut oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the baking soda, salt, and chocolate chips.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool before serving.
