Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine pumpkin puree, maple syrup, brown sugar, granulated sugar, melted butter, and vanilla extract until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoons of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are slightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
