- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves minced garlic
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onions and garlic until soft.
- Add the diced potatoes, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream and cheddar cheese until melted and combined.
- Serve hot, garnished with additional cheddar cheese and fresh herbs if desired.
Notes
- For a thicker soup, blend more of the potato mixture.
- Adjust seasoning to taste.
