- 2 cups fresh blueberries
- 1 cup granulated sugar
- 2 cups cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, mix flour, oats, brown sugar, melted butter, and salt to make the topping.
- Spread the cheesecake mixture into a lined baking dish and top with blueberries.
- Spread the crumb mixture evenly over the blueberries.
- Bake for 40-45 minutes or until golden brown.
- Let cool before slicing into bars.
Notes
- For a twist, try adding lemon zest to the cheesecake mixture.
- Use frozen blueberries if fresh is not available.
