- 1 cup blueberries
- 8 ounces cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together melted butter, egg, and vanilla extract. Combine wet and dry ingredients, then gently fold in blueberries.
- In a separate bowl, mix cream cheese until smooth and add a bit of sugar.
- Scoop a portion of the muffin batter into each liner, add a dollop of cream cheese mixture, and top with more batter.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
- For an extra touch, add a crumb topping before baking.
