- 2 medium sweet potatoes
- 1 pound chicken breast
- 1 cup BBQ sauce
- 1 cup corn
- 1 avocado
- ¼ cup chopped green onions
- ½ cup shredded cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
- While sweet potatoes are baking, cook the chicken breast in a skillet over medium heat for 6-7 minutes on each side until fully cooked.
- Shred the chicken and mix it with BBQ sauce.
- Once sweet potatoes are cooked, cut them open and fill with BBQ chicken, corn, avocado, green onions, and cheese.
- Serve warm and enjoy!
