Ingredients

  • 1 cup quinoa
  • 1 block firm tofu
  • 2 cups fresh spinach
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare quinoa according to package instructions.
  3. Press tofu to remove excess water, then cut into cubes.
  4. Toss tofu with olive oil, garlic, paprika, cumin, salt, and pepper.
  5. Spread tofu on a baking sheet and bake for 25-30 minutes, turning halfway.
  6. In a pan, sauté spinach until wilted.
  7. Combine quinoa, chickpeas, and sautéed spinach in a bowl.
  8. Add baked tofu on top and serve.

Notes

  • For extra flavor, marinate the tofu before baking.
  • Feel free to add your favorite vegetables.
