- 2 cups all-purpose flour

- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 2 cups diced apples
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix melted butter, eggs, buttermilk, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in diced apples gently.
- In a small bowl, combine brown sugar, oats, and a pinch of cinnamon for the streusel topping.
- Divide the muffin batter among the prepared muffin cups and sprinkle streusel on top.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, consider adding chopped nuts or raisins to the batter.
- Feel free to adjust the amount of cinnamon to taste.
