Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add the diced apples and fold them gently into the batter.
  6. In a separate bowl, mix brown sugar, oats, cinnamon, and flour to create the crumb topping.
  7. Fill the muffin cups 3/4 full with batter, then sprinkle the crumb mixture on top.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.
