Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add sugar and mix until combined.
  4. Add eggs one at a time, followed by vanilla, apple cider, cinnamon, and nutmeg. Mix until smooth.
  5. Pour the cheesecake batter over the crust and smooth the top.
  6. Bake for about 60 minutes or until set.
  7. Let cool and refrigerate for at least 4 hours before serving.
